Juicy Air-Fryer Boneless Pork Chops, No Breading Needed
I love a crunchy breaded chop, but most weeknights I do not love the three bowls it costs me. This is the other pork chop, the one with zero breading and zero dredging station. A smoky rub gets pressed straight onto the meat, the air fryer browns it into a crust of its own, and a thermometer tells you the exact second to stop. Pull at 145F, rest 5 minutes, and you get a juicy chop with a little blush of pink, the way pork was always supposed to be eaten. It happens to be keto, but honestly I make it because it is fast and the cleanup is nothing.
Why this one is so easy
No breading means no flour bowl, no egg bowl, no crumb bowl. You season, you cook, you eat, and cleanup is a plate.
The dry rub browns into a crust of its own in the hot air, so you still get that seared outside without a skillet.

Buy chops that are at least 1 inch thick. Thin ones race past 145F before the outside gets any color.
Pull at 145F, not 160F. That old well-done habit is why pork chops got their dry reputation. A blush of pink at 145 is safe and correct.
Check the thickest chop, not the smallest one. If they vary a lot, pull the small ones early and give the big one an extra minute.
The rest is part of the recipe, not a suggestion. Five minutes on the plate keeps the juices in the meat.
Make it your own
+ Cajun: swap the whole rub for a tablespoon of Cajun seasoning, and skip the added salt if your blend has it.
+ Ranch: a tablespoon of dry ranch seasoning pressed on with the oil is weirdly good on pork.
+ Herb and lemon: drop the paprika, double the thyme, and squeeze lemon over the rested chops.
If you are out of something
Bone-in chops work with the same rub, just add 2 to 4 minutes and still pull at 145F.
No smoked paprika? Regular paprika plus a small pinch of chili powder gets you close.
Avocado oil or melted butter both stand in fine for the olive oil.
Rub the chops up to a day ahead and keep them covered in the fridge, the rub does a light dry-brine thing overnight that makes them even better. Cooked chops keep 3 to 4 days in the fridge. Reheat in the air fryer at 350F for 3 to 4 minutes so they warm through without drying, or slice them cold over a salad and skip the reheat entirely. I do not recommend freezing cooked chops, the texture goes mealy.
