When the night is already falling apart, this is the stretch to cook from. Everything in here runs at 400F, because small pieces want high heat and a short stay. The garlic butter shrimp goes in barely seasoned and comes out looking planned, and frozen shrimp works fine too: rinse the ice off, pat it properly dry, add two minutes. Honey garlic salmon glazes itself while it cooks, and cajun salmon does the same trick with heat instead of sweet. Smash burgers get a real crust with none of the stovetop splatter, and the lemon garlic cod is usually flaking before the rice is done. Skip the preheat at this end of the list and you are out a minute, nothing more.

The basket does the cooking and I go do something else. The only rule that really matters is a single layer with a little space between pieces, because a crowded basket steams instead of crisping. Two quick batches beat one sad pile.

Air fryer dinners worth a little more time
Half an hour and change buys you the recipes that want room and a bit of attention. These are the ones where the three minute preheat earns its keep, because breading has to hit hot metal or it turns pale and greasy. A proper chicken parmesan keeps its cutlet crisp under all that cheese. Garlic parmesan wings on a weeknight, which I did not think was allowed. Buffalo tofu that genuinely crisps, and mini meatloaf in individual portions so nobody waits an hour for a loaf. Leftovers from this band come back better than anything else here: four minutes at 375F and the crust returns, which a microwave will never do for you.

Food that lands in a hot basket starts crisping straight away instead of drying out slowly while the machine catches up. For sausages, meatballs and vegetables I skip it and add a minute or two at the end.
Most of these run between 375F and 400F. I stay at 400F for chicken skin, wings and anything breaded, and drop to 375F for salmon and pork so the outside does not race ahead of the middle. Then cook to temperature rather than to the clock: 165F in the thickest part of chicken, 145F for pork and salmon.
Frozen shrimp, yes, straight from the bag. Rinse the ice off, pat it very dry, add two or three minutes. Frozen chicken breasts and thighs cook through but they will not crisp the way thawed ones do, so check the middle hits 165F before you call it. Breaded frozen things like tenders are the easiest win of the lot.
One layer, a little space between pieces, and no crowding. That is most of the secret. A standard 5 to 6 quart basket feeds about four people, so cook in two rounds rather than piling it in. Perforated air fryer parchment saves the scrubbing without blocking the airflow, but put the food on it before the basket heats up or it will lift into the element.
