The couscous steams itself under a lid, the sauce is five ingredients in a bowl, and the whole thing runs on the chickpea timer. Twenty minutes, one basket, and the kind of crunch that makes you forget this started as pantry cleanup.

If your tahini sauce clumps, do not panic and do not add oil. Keep whisking in cold water a spoonful at a time and it turns silky.
Salt the couscous water, not the finished couscous. It seasons through instead of sitting on top.
Make it your own
+ Spicy: add a 1/4 teaspoon of cayenne to the chickpea spices and a pinch of Aleppo pepper on top.
+ Greek-ish: swap the tomatoes for kalamata olives and pile on chopped fresh dill.
+ Warm bowl for cold nights: skip the raw veg and roast zucchini chunks in the basket for the last 8 minutes with the chickpeas.
If you are out of something
Quinoa or rice instead of couscous both work, just start them first since they take longer than 5 minutes.
No tahini? Hummus thinned with lemon juice and water makes a shockingly decent stand-in sauce.
White beans crisp up the same way if chickpeas are not in the pantry, watch them a couple minutes earlier.

Fluff the couscous and split it between bowls. Top with cucumber, tomatoes, red onion, and a big pile of hot crispy chickpeas, then drizzle the tahini sauce over everything.
