Crispy Air-Fryer Tofu with Soy-Garlic Sauce

This is the plain crispy tofu I make on the nights when even my buffalo version feels like too much of a production. You tear the block into raggedy chunks, dust them in cornstarch, and let the air fryer turn them golden while a sticky soy-garlic sauce burbles away on the stove. The sauce stays on the side, which sounds fussy but is actually the lazy move: nothing goes soggy, and everyone spoons on as much as they want. Twenty minutes, one basket, and the tofu skeptic at your table goes quiet.

Why this one is so easy

Tearing instead of cubing gives you all those craggy edges, and craggy edges are where the crunch lives. It is also faster than neat knife work.

The sauce never touches the basket. Tossed tofu goes soft in minutes, but sauce spooned over at the table keeps the crackle until the last bite.

One block, one basket, no batches. This is the 20 minute version of takeout tofu, and the air fryer does almost all of it unattended.

Della's tips

Extra-firm only. Anything softer holds too much water and falls apart when you tear it.

A quick 5 minute press under a heavy pan is enough here. The tear plus cornstarch does the rest of the crisping work.

Shake the basket properly at the halfway mark, do not just nudge it. Every piece needs a turn facing the heat.

Taste the sauce before it thickens. More maple if you like it sweeter, a pinch of red pepper flakes if you want heat.

Make it your own

+ Spicy: stir a teaspoon of sriracha or a spoon of chili crisp into the finished sauce.

+ Gingery: grate a teaspoon of fresh ginger into the saucepan with the garlic.

+ Crispy tofu bowl: rice, quick cucumbers, shredded carrot, avocado, tofu on top, sauce over everything.

If you are out of something

Tamari instead of soy sauce keeps the whole thing gluten-free, cornstarch is already fine.

Agave or brown sugar works in place of maple syrup, same amount.

No rice vinegar? A squeeze of lime or a splash of apple cider vinegar covers the brightness.

Make ahead

Crispy tofu is at its best straight from the basket, so I make the sauce ahead instead. It keeps in a jar in the fridge for a week and reheats in 30 seconds. Cooked tofu keeps 3 to 4 days refrigerated and comes back surprisingly well with 3 to 4 minutes in the air fryer at 375F. The microwave turns it soft, skip it.

Drain the tofu and press it between two clean kitchen towels with something heavy on top for about 5 minutes while you measure everything else. No fancy press needed, a skillet works.

Tear the block into rough bite-size chunks with your hands instead of cubing it. The ragged edges are what get shatteringly crispy. Toss the pieces with 1 tablespoon soy sauce and the oil, then sprinkle over the cornstarch and garlic powder and toss again until every piece looks lightly dusted.

Air fry at 400F for 10 to 12 minutes, shaking the basket halfway, until deep golden with crunchy edges. One block fits a standard basket in a single layer. Doubling it? Cook in two rounds.

While the tofu cooks, make the sauce. Simmer the 3 tablespoons soy sauce, maple syrup, rice vinegar, minced garlic, and sesame oil in a small saucepan for 2 minutes, then stir in the cornstarch slurry and cook about 30 seconds until it turns glossy and coats a spoon.

Pile the tofu over rice and spoon the sauce over at the table, or serve it as a dip. Keeping the sauce separate until the last second is how the crunch survives. Scallions and sesame seeds on top.
