Crispy Air-Fryer Salmon Patties

I keep a couple cans of salmon in the pantry the way some people keep emergency cash. When the week has gone sideways and the fridge is down to condiments and green onions, this is the dinner that shows up: crispy golden patties that taste way more put together than they have any right to. One can, one egg, a handful of panko, ten minutes in the air fryer. It eats like a real dinner, not a pantry rescue, and I am never in a hurry to admit which one it was.

Why this one is so easy

The whole thing is pantry staples plus one can. Dinner for four for a few dollars, and it still feels like real cooking.

The air fryer gets the outside genuinely crispy with one spray of oil, no shallow frying, no splatter to wipe off the stove.

Egg for structure, mayo for moisture, panko to soak up the rest. That trio is why these hold together and stay tender instead of turning into fish hockey pucks.

Della's tips

Drain, then drain again. Excess liquid is the villain of every crumbly salmon patty story.

Squeeze test before shaping: grab a handful, squeeze, open your hand. If it holds its shape, you are good. If it cracks apart, add a spoon of mayo. If it feels wet, add a spoon of panko.

Flip with a thin spatula and a gentle hand at the halfway point, when the bottom crust has set. Flipping too early is how patties break.

Ten spare minutes? Chill the shaped patties in the fridge first. Cold patties hold their shape even better.

Make it your own

+ Old school: a pinch of Old Bay in the mix and tartar sauce on the side.

+ Cajun: a teaspoon of Cajun seasoning in the mix and a squeeze of lemon at the end.

+ Patty melt night: tuck one in a toasted bun with lettuce and tartar sauce, basically a homemade fish sandwich.

If you are out of something

Two 5 ounce cans of tuna work with the exact same method.

Crushed saltines instead of panko, the true old fashioned way.

Leftover cooked salmon, flaked, is honestly the deluxe version. Same amounts.

Make ahead

The mix or the shaped patties keep covered in the fridge for a day, and the chill actually helps them hold together. Cooked patties keep 3 days in the fridge and reheat beautifully in the air fryer at 350F for 3 to 4 minutes, back to crispy. They freeze well too, cooked, for up to 2 months. And a cold leftover patty crumbled over a salad is the kind of lunch I plan the leftovers around.

Drain the salmon like your dinner depends on it, because it does. Press it in the strainer until no more liquid comes out. Wet salmon is the number one reason patties fall apart. Flake it into a bowl, mashing the soft bones right in if your can has them.

Add the egg, mayo, panko, green onions, Dijon, lemon juice, and pepper. Mix until it just holds together when you squeeze a handful. Canned salmon is already salty, so I do not add salt here.

Shape into 4 patties about three quarters of an inch thick, pressing each one firmly so it is compact. Firm pressing now means no crumbling later.

Set the patties on a parchment liner or a light spray of oil, give the tops a spray too, and air fry at 390F for 8 to 10 minutes, flipping gently at the halfway mark, until deep golden on both sides.

Rest them 2 minutes so they firm up, then serve with lemon wedges and whatever creamy sauce is in the fridge door.
