Spaghetti and meatballs is not a dish I was willing to give up on plant-based nights, so I made the lentil version earn its seat. Walnuts are the trick. Pulsed with lentils, tomato paste, fennel, and a flax egg, they bring the rich, savory depth that plain bean balls always miss, and the air fryer gives every one of the eighteen a proper browned crust with no rolling around in a skillet. The marinara warms while they cook, the pasta boils alongside, and 25 minutes later it looks and eats like the pasta night you grew up with. If there is a meatball loyalist at your table, this is the version to try on them.

Why this one is so easy

Lentils bring the protein and walnuts bring the fat and that deep, almost meaty savor. Together with the nutritional yeast, each serving lands around 20 grams of plant protein.

The food processor does all the work in two rounds of pulsing. No sauteing an onion, no chopping parade, just dump, pulse, roll.

Air frying gets the crust a baked lentil ball never quite manages, and the crust is what makes these read as meatballs instead of falafel's sad cousin.

Della's tips

Pulse, taste, then roll. The mixture is fully seasoned before it cooks, so this is your one free chance to fix salt and herbs.

Keep some texture. You want coarse crumbs pressed together, not hummus. If you can still see flecks of lentil, you did it right.

Toss them with sauce at the end, never air fry them soaked in marinara. The crust you just built dissolves on contact.

If the mix feels wet and will not roll, stir in another spoonful of breadcrumbs and let it sit for 2 minutes to drink it up.

Make it your own

+ Meatball subs: pile them into toasted hoagie rolls with marinara and a blanket of melty vegan mozzarella.

+ Herby and green: swap the basil for 1/4 cup fresh parsley pulsed right into the mix.

+ Spicy arrabbiata night: add red pepper flakes to the mix and warm your marinara with a minced garlic clove and a pinch more flakes.

If you are out of something

About 3 cups of home-cooked brown or green lentils replace the cans, cooked firm and drained really well.

Pecans or sunflower seeds stand in for walnuts if you need to, sunflower seeds make it nut-free.

Gluten-free breadcrumbs or oat flour swap straight in for the panko.

Make ahead

These are a meal-prep gift. Roll the balls up to 2 days ahead and keep them covered in the fridge, then air fry straight from cold with an extra minute or two. Cooked meatballs keep 4 days in the fridge and freeze for 3 months, and they reheat best in the air fryer at 350F for 4 to 5 minutes so the crust comes back before they meet the sauce. Sauced leftovers reheat gently in a pan and taste like they simmered all afternoon.

Stir the flaxseed and water together in a small cup and let it gel for 5 minutes. Meanwhile, pulse the walnuts in a food processor until they look like coarse crumbs, not butter.

Add the lentils, breadcrumbs, nutritional yeast, tomato paste, garlic, oregano, basil, fennel seeds, salt, a good grind of pepper, and the flax gel. Pulse just until the mixture holds together when squeezed, still a little rough. Overblending makes mush, so short pulses.

Roll into balls of about 2 tablespoons each, roughly 18. Wet hands help. Spray the basket and the meatballs with oil and arrange them in a single layer, in two rounds if your basket runs small.

Air fry at 375F for 10 to 12 minutes, shaking gently halfway, until browned and crusty outside and firm to a poke. Warm the marinara while they cook, then spoon it over the meatballs and spaghetti, or roll them in the sauce right before serving.
