Buffalo sauce barely counts as a recipe, and that is exactly why I love it. It is hot sauce and melted butter, whisked together until it goes glossy, and it turns a batch of plain crispy wings or tofu into the thing everyone reaches for. The only real trick is the ratio, because that is what decides whether it is a gentle, buttery medium or a sharp, sweat-on-your-lip hot. I keep the two bottles side by side and make it fresh every time.

Why this one is so easy

Two real ingredients, hot sauce and butter, and both are already in the fridge on wing night.

You control the heat completely: more butter for mellow, less for a sharper burn.

It comes together faster than the air fryer preheats, so the crispy stuff never sits and goes soft.

Della's tips

The base ratio is 2 parts hot sauce to 1 part butter. That is tangy and medium. Push to 3 to 1 for a sharper, hotter sauce, or back toward 1 to 1 for a mellow, buttery one.

Cayenne pepper sauce is the whole point. Frank's RedHot is the classic; a thick sriracha or a smoky chipotle sauce makes a different sauce, not buffalo.

Melt the butter, then whisk the hot sauce into it off the heat. Boiling the sauce is what makes it separate into an oily layer.

If it does break, whisk in a teaspoon of cold water or a small extra knob of cold butter to bring it back together.

Toss anything crispy at the very end, right before serving. Buffalo sauce sitting on a coating softens it fast.

Make it your own

+ Honey buffalo: a tablespoon of honey for a sweet-heat glaze that clings a little more.

+ Garlic buffalo: double the garlic powder, or grate in a small fresh clove off the heat.

+ Extra rich, restaurant style: go 1 to 1 hot sauce to butter for that mellow, glossy wing-joint sauce.

+ Ranch-cooled dip: stir a few spoonfuls into ranch or blue cheese for a milder pink dip.

If you are out of something

No Worcestershire? A few drops of soy sauce plus a tiny splash of vinegar covers the savory depth.

Vegan buffalo: a plant butter melts and emulsifies the same way, and vegan Worcestershire skips the anchovy.

Any cayenne pepper sauce works for Frank's. Louisiana and Texas Pete are close cousins; taste for salt, they vary.

Out of butter? Warm olive oil works but tastes flatter, so add an extra splash of Worcestershire to make up for it.

Make ahead

It keeps a week or two in a jar in the fridge, but the butter sets solid when it is cold, so it looks separated and firm. That is normal. Warm it gently, 20 seconds in the microwave or a minute in a low pan, and whisk it back to glossy before you use it. Do not boil it to reheat, that splits it. I usually make it fresh, honestly, since it takes five minutes and it is best warm and emulsified.
