If I had to keep one sauce in the fridge, it would be this one. Honey, soy, a pile of fresh garlic and a splash of rice vinegar, simmered for about two minutes until it turns glossy and clings to a spoon. It is what makes chicken thighs, frozen meatballs and a piece of salmon all taste like I planned dinner, and it takes less time than the air fryer needs to get going.

Why this one is so easy

Four real ingredients, all of them already in the door of the fridge or the back of the cupboard.

It coats instead of sliding off, which is the whole difference between glazed chicken and wet chicken.

One batch covers a tray of meatballs, a pound of chicken, or four salmon fillets, so it stretches across a week of dinners.

Della's tips

The backbone ratio is roughly 1 part soy to 1.5 parts honey. More soy and it turns salty and thin, more honey and it goes candy sweet and stops tasting savory.

Fresh garlic, minced, not powder. This is a four-ingredient sauce, so garlic is a third of the flavor and the jarred stuff tastes flat here.

Mix the cornstarch with cold water first, always. Straight into hot liquid it seizes into little lumps you cannot whisk out.

Keep the simmer gentle. Honey scorches fast at a hard boil and burnt honey turns the whole batch bitter.

Sauce the food at the end, not before it cooks. Sugar in an air fryer at 400F goes dark long before the chicken is done.

Make it your own

+ Honey garlic ginger: a teaspoon of grated fresh ginger in with the garlic.

+ Sesame version: a half teaspoon of toasted sesame oil off the heat, plus sesame seeds to finish.

+ Thinner glaze for salmon, no cornstarch at all. Cut the honey and soy to 2 tablespoons each and brush it on.

+ Sticky wing sauce: double it, simmer an extra 2 minutes, and toss the wings straight in the pan.

If you are out of something

Tamari or coconut aminos keep it gluten free. Coconut aminos run sweeter, so pull the honey back a little.

Maple syrup instead of honey works, with a rounder and slightly less floral result.

White vinegar or apple cider vinegar covers for rice vinegar. Use a little less, both are sharper.

No cornstarch? Simmer it 4 or 5 minutes longer and it reduces to a similar thickness on its own.

Make ahead

It keeps two weeks in a jar in the fridge and thickens up quite a bit when it is cold, which is normal. Warm it for 20 seconds in the microwave or in a pan and it loosens right back. I usually double the batch, because a jar of this in the fridge means chicken thighs and a bag of frozen meatballs become dinner without a plan. It freezes fine for a couple of months too, unlike the mayo based sauces.

Stir the honey, soy sauce, garlic, and rice vinegar together in a small saucepan. Cold pan, no oil, nothing to preheat.

Bring it to a gentle simmer over medium heat and let it bubble for 2 to 3 minutes. The raw garlic edge softens and the whole thing smells like the good part of a takeout order.

Whisk the cornstarch and cold water in a cup until smooth, then pour it in while stirring. Give it a minute and it goes from watery to glossy.

Off the heat, stir in the butter if you want it richer, and the pepper flakes if you want a little heat behind the sweetness. It thickens more as it cools, so pull it a touch looser than you think.
