Bottled teriyaki is mostly corn syrup, and it never sticks to anything. This one takes ten minutes on the stove while the air fryer does the real work, and it comes out glossy enough to coat salmon bites without sliding off into a puddle. Soy, honey, fresh garlic, fresh ginger. That is the whole thing, and you probably have all four already.

Why this one is so easy

No corn syrup, no thickener you cannot pronounce, and it costs a fraction of a bottle.

It is thick enough to glaze. Bottled teriyaki tends to run straight off salmon and pool on the plate.

Ginger and garlic go in fresh, which is the difference you actually taste.

Della's tips

Soy to sweetener runs about 4 to 3 here. Push the honey higher and it starts tasting like candy, push it lower and the salt takes over.

Grate the ginger on a microplane rather than chopping it. Little fibrous chunks in a glaze are unpleasant, and grated ginger dissolves right in.

Cold water for the slurry, no exceptions. Cornstarch hitting hot liquid clumps instantly.

It looks too thin in the pan and sets up firmer as it cools, so stop while it still moves easily.

Brush it on at the end of cooking, never before. Sugar under high air-fryer heat scorches long before the protein is done.

Make it your own

+ Pineapple teriyaki: swap 2 tablespoons of the honey for pineapple juice for a fruitier, tangier glaze.

+ Spicy: a teaspoon of sriracha or a half teaspoon of red pepper flakes in with the garlic.

+ Dipping sauce for gyoza or skewers: skip the cornstarch and leave it loose.

+ Marinade version: leave out the cornstarch and marinate chicken or beef in it for 30 minutes, then glaze with a fresh batch after cooking. Never reuse the marinade.

If you are out of something

Tamari or coconut aminos for a gluten free version. Aminos are sweeter, so cut the honey to 2 tablespoons.

Brown sugar instead of honey gives a slightly deeper, more caramel result and thickens a touch faster.

Mirin in place of the rice vinegar if you have it, which is the more traditional route. Use 2 tablespoons and pull the honey back.

Ground ginger works in a pinch, about a quarter teaspoon, though it tastes dustier than fresh.

Make ahead

Keeps two weeks in a jar in the fridge and firms up cold, which is exactly what you want for brushing. Twenty seconds in the microwave loosens it again. It also freezes well for a couple of months, so I sometimes pour a double batch into an ice cube tray and drop one cube into a hot pan when a stir fry needs saving.

Combine the soy sauce, honey, garlic, ginger, and rice vinegar in a small saucepan and set it over medium heat.

Once it simmers, give it 2 minutes. That is long enough to cook the raw bite out of the garlic and ginger without reducing it down to salt.

Stir the cornstarch into the cold water first, then pour that in and keep stirring. About a minute later it turns glossy and starts coating the back of the spoon.

Pull it off the heat and add the sesame oil if you are using it. Sesame oil loses its perfume if you boil it, so it goes in last.
