Air-Fryer Buffalo Wings for a Crowd

Wings for a crowd have one real problem, and it is not the cooking. It is that a basket holds about a pound and you need two, so batch one is lukewarm and going soft by the time batch two is done. The fix took me embarrassingly long to land on: everything goes back in together for three minutes at the end. Batch one crisps back up, the whole plate is hot at the same moment, and then the sauce goes on at the very last second. That last bit is not fussiness. Sauced wings have about five good minutes in them, and they should all be spent at the table.

Why this one is so easy

Two pounds of wings from one basket, with the first batch as crisp as the last. That is the whole problem with wings for a crowd, and the reunion step solves it.

No deep fryer, no quart of oil to cool down and throw away, no smell in the house for two days.

Baking powder gives you crackly skin without a coating, so these stay gluten free and they never go gummy under the sauce.

The sauce is two real ingredients and it takes as long as melting butter.

Della's tips

Dry, dry, dry. Wet skin is the only reason air fryer wings come out flabby, and paper towels are the whole fix.

Aluminum free baking powder, and do not go over a tablespoon for two pounds. Too much and you can taste it.

Single layer with real gaps. Wings that touch steam each other, and crowding is what makes people say the air fryer does not do wings.

Sauce at the very last second. Sauced wings are soft wings within about five minutes, which is why every wing place sauces to order.

Serve the sauce warm. Cold sauce on hot wings seizes the butter and slides off in a broken puddle.

Make it your own

+ Extra hot: a spoon of chili crisp or a few dashes of a habanero sauce stirred into the butter.

+ Honey hot: double the honey for the sweet heat version that disappears fastest with kids around.

+ Dry rub instead: skip the sauce and toss the hot wings in the seasoning of your choice while they are still steaming.

+ Party sized: cook three rounds and hold everything in a low oven, then do the 3 minute reunion in two goes.

If you are out of something

Frozen wings work if you thaw them completely and dry them properly. They hold more water, so expect a couple of extra minutes.

Any cayenne and vinegar hot sauce. The classic orange kind is what buffalo tastes like, but use what you like.

Ghee or a neutral oil instead of butter for dairy free, though you lose a little of the clingy texture.

Party wings that come pre-split save you a knife and about five minutes.

Make ahead

Wings are better with a head start you cannot really see. Toss them in the baking powder mix, spread them on a rack and leave them uncovered in the fridge for a few hours or overnight: the cold air dries the skin further and the crust comes out noticeably better. The sauce keeps a week in the fridge and rewarms in the microwave in twenty seconds. Cooked and unsauced, wings reheat at 400F for 4 minutes and come back genuinely crisp. Cooked and sauced, they do not, which is the whole argument for saucing at the table.

Pat the wings dry with paper towels, then go back and do it again. Every bit of surface water you leave is skin that will steam instead of crisp.

Toss them with the baking powder, salt, garlic powder and pepper until they look evenly chalky. It is baking powder, not baking soda, and the two are not interchangeable here.

Lay half the wings in the basket in a single layer with space between them. A pound is about what a standard basket takes, which is why this is two rounds.

Air fry at 400F for 20 to 22 minutes, flipping twice along the way, until the skin is deep golden and audibly crisp. Tip that batch onto a plate and cook the second the same way.

While the second round cooks, melt the butter gently and whisk in the hot sauce, Worcestershire and the honey if you are using it, until it goes glossy and smooth.

Now the part that makes this work for a crowd: tip all the wings back into the basket together and give them 3 minutes at 400F. Batch one comes back to life and everything is hot at the same moment.

Toss the wings in the warm sauce right before they hit the table, not a minute earlier, and serve with celery and blue cheese.
