These exist because someone at my table only eats beige food shaped like a nugget, and I got tired of the freezer bag winning. Turns out homemade nuggets are barely a project when you skip the flour and egg circus: a quick mayo coat, a roll in seasoned panko, and the air fryer does the rest. Ten minutes later you have golden, crunchy nuggets with actual chicken inside, and a freezer stash if you doubled the batch like I always tell myself to.

Why this one is so easy

Real chicken inside, not the mystery paste from the bag, and they still come out crunchy without a drop of frying oil.

The mayo coat is one bowl and zero drips, and it bakes into the crust so the chicken underneath stays juicy.

They freeze beautifully, so one lazy Sunday batch turns into three school-night dinners.

Della's tips

Keep the chunks the same size. One giant nugget in a batch of small ones is how you end up guessing.

Press the panko on firmly. Loose crumbs fall off and scorch in the basket.

Do not skip the spray. It is what turns the panko golden instead of pale and dusty.

Two batches beats one crowded basket. Crowded nuggets steam soft instead of crisping.

Make it your own

+ Spicy: a pinch of cayenne in the panko, or a spoon of hot sauce stirred into the mayo.

+ Cheesy: swap 1/4 cup of the panko for grated parmesan.

+ Ranch: stir a spoonful of ranch seasoning into the crumbs and skip the extra salt.

If you are out of something

Plain Greek yogurt works instead of mayonnaise, same thin coat, same job.

Prefer the classic route? A beaten egg instead of the mayo works, it is just messier.

Gluten-free panko swaps straight in, no other changes.

Make ahead

Bread the nuggets raw, freeze them flat on a tray, then bag them up for a month or two of easy dinners. Cook straight from frozen at 400F, adding 4 or 5 minutes, no thawing. Cooked leftovers keep a few days in the fridge and re-crisp in the air fryer at 380F in about 4 minutes, which beats the microwave by a mile.

Cut the chicken into even bite-size chunks, about 1.5 inches. Even pieces cook at the same speed, which matters more than making them pretty.

In a big bowl, stir the chicken with the mayonnaise and Dijon until every piece has a thin coat. This replaces the whole flour and egg assembly line, and it keeps the inside juicy.

Mix the panko with the garlic powder, onion powder, paprika, salt, and pepper in a shallow bowl. Press each piece into the crumbs so they really stick.

Mist the nuggets with cooking spray and air fry at 400F for 8 to 10 minutes, flipping halfway, until deep golden and 165F inside. Single layer only, so plan on two batches.

Let them cool a minute, then serve with whatever dipping sauce keeps the table quiet.
