Crispy Air-Fryer Chicken Quesadillas
Quesadillas are my back-pocket dinner for a night that got away from me. Grab a rotisserie chicken, stir the filling together, fold, and let the air fryer crisp them golden while you find the sour cream. The one thing nobody tells you: the air fryer fan will absolutely blow a quesadilla open, so pin the edge shut with a couple toothpicks. Do that, and you get crispy, cheesy wedges with almost no effort and no pan to flip.
Why this one is so easy
Crispy quesadillas with no standing over a pan and flipping, and way less grease.
Rotisserie chicken makes the filling a five-minute job, so this is genuinely fast.
It is a kid-favorite dinner that comes together with pantry and fridge odds and ends.
Della's tips
Pin it shut. Toothpicks through the open edge, or a metal rack on top, or the fan flips it open. This is non-negotiable.
Do not overfill. A thin, even layer melts through and stays put. Overstuffed ones ooze and will not crisp.
Spray the outsides, not just the basket. That is what gives the golden, crackly shell.
Single layer with breathing room. Cook in batches instead of crowding.
Make it your own
+ Peppers and onion: fold in some sauteed peppers and onion for a fajita-style quesadilla.
+ Spicy: use pepper jack, or add sliced jalapeno or a shake of cayenne.
+ Beans: mix in black or refried beans to stretch it or go half-veg.
If you are out of something
Shredded beef, pork, or shrimp instead of chicken, or go all-cheese.
Cheddar, Monterey Jack, or Oaxaca instead of the blend. Anything that melts.
Corn tortillas for gluten-free. Warm them first so they fold without cracking.
You can assemble them uncooked with the toothpicks in and refrigerate up to a day ahead. Cooked leftovers reheat well in the air fryer at 350F for 2 to 3 minutes to re-crisp, much better than the microwave. They also freeze, and reheat from frozen in the air fryer with a couple extra minutes.

Stir the shredded chicken, taco seasoning, and salsa together. Keep the salsa on the thick side so the filling does not make everything soggy.
Lay a tortilla flat. Spread a quarter of the chicken over one half, top with half a cup of cheese, and fold it into a half-moon.
Secure the open edge with 2 or 3 toothpicks. This is the key step: the air fryer fan will blow an unsecured quesadilla open. A metal rack set on top works too.
Spritz both outsides with oil and set them in a single layer, 1 or 2 at a time. Air fry at 400F for about 6 minutes, flipping carefully halfway, until golden and crisp and the cheese is melted. This is two batches for four.
Pull the toothpicks, rest a minute, and slice into wedges. Serve with sour cream, guac, and salsa.
