Brown the beef right in the air fryer to keep it a one-appliance dinner. Break it up well so it cooks evenly.

Stand the shells up so they crisp all over and the filling does not spill out.

Cheese on the inside, against the shell, melts into a glue that holds the taco together.

Cold toppings go on last, after the shells come out, so the lettuce stays crisp.

Make it your own

+ Beef and bean: stir a scoop of refried or black beans in with the meat.

+ Spicy: extra chili powder or a chopped chipotle in the beef.

+ Turkey or chicken: swap the beef, just cook it to 165F.

If you are out of something

Soft tortillas work, they just will not get crunchy. Warm them a minute in the air fryer.

Any melty cheese. A sharp cheddar brings the most flavor.

No taco seasoning? Chili powder, cumin, garlic powder, paprika, salt, and a pinch of oregano.

Make ahead

Brown and season the beef up to three days ahead and keep it in the fridge, then assemble and crisp the tacos fresh. The crunch does not survive storage, so crisp the shells right before eating. Leftover seasoned beef also freezes well for a month.

Crumble the ground beef into the air fryer basket, break it up, and air fry at 390F for 8 to 10 minutes, stirring once or twice, until browned. Drain off the grease and stir in the taco seasoning with a splash of water.

Fill the taco shells with the beef and a good handful of cheese. Stand them up in the basket, working in batches so they are not crammed in.

Air fry at 380F for 4 to 5 minutes, until the shells are crisp and the cheese is melty.

Pile on the cold toppings, lettuce, tomato, whatever you love, and serve right away while the shells still crunch.
