Here is my whole case for fish on a weeknight: a smoky chili rub instead of breading, ten minutes in the basket instead of a pot of oil, and a kitchen that still smells like your kitchen when you are done. The cod comes out in big juicy flakes with spiced, lightly charred edges, and while it cooks you stir a lime crema and toss a lazy slaw. By the time the tortillas are warm there is a full taco spread on the counter, lighter than the beef kind without feeling like a downgrade.

Why this one is so easy

No breading and no batter means no soggy coating and no frying smell. The spice rub does all the flavor work in about 30 seconds.

The fish cooks in 10 minutes flat while you warm tortillas, so the whole thing lands inside a real weeknight window.

One bowl of slaw and one little crema turn plain fish into an actual event. Cheap ingredients, big payoff.

Della's tips

Dry fish takes the rub, wet fish slides it off. Pat the fillets like you mean it before seasoning.

Do not flip the fish. White fish is delicate and it cooks through fine from one side. Less handling, fewer broken fillets.

Go by flake, not by clock. The second it flakes easily at the thickest point, it is done. 145F if you own a thermometer.

Char the tortillas for a few seconds over a gas flame or in a dry pan. It makes them taste like a taco stand instead of a plastic bag.

Make it your own

+ Spicy: add a quarter teaspoon of cayenne to the rub and a minced chipotle to the crema.

+ Baja bowl: skip the tortillas and pile everything over rice with the crema on top.

+ Shrimp tacos: swap in a pound of large shrimp and drop the cook time to 6 to 8 minutes.

If you are out of something

Any firm white fish works: tilapia, haddock, halibut, or pollock. Just watch thinner fillets a couple minutes early.

Greek yogurt stands in for the sour cream in the crema, no problem.

Flour tortillas if that is what the pantry has. Corn just tastes more like the real thing.

Make ahead

The crema and the slaw both hold in the fridge for a day, and honestly the crema gets better overnight. Season the fish up to a few hours ahead and keep it covered in the fridge. Cook the fish right before eating though, because reheated white fish turns sad fast. Leftover cooked fish keeps 2 days and does a decent second act crumbled over a lunch salad.

Make the crema first so the flavors settle: stir the sour cream, mayo, the zest and juice of one lime, and a pinch of salt together. Park it in the fridge.

Toss the cabbage with the cilantro, the juice of the second lime, and a pinch of salt. That is the whole slaw. Let it sit while you handle the fish.

Pat the fish very dry and cut it into 4 even pieces. Rub with the oil, then the chili powder, cumin, smoked paprika, garlic powder, salt, and pepper on all sides.

Lay the fish in a single layer on a parchment liner or a light spray of oil. Air fry at 400F for 8 to 10 minutes, no flipping, until it is opaque, flakes easily, and reads 145F in the thickest part.

Warm the tortillas, flake the fish into big chunks with a fork, and build: a pile of slaw, a few chunks of fish, a good drizzle of crema. Eat immediately, over the plate.
