Cauliflower is the one vegetable that actually earns the middle of a taco, and the air fryer is why. That hot circulating air does something a skillet never quite manages: real char on the edges of every floret while the middles go tender. Toss them in smoky taco spices, give the basket 15 minutes, then pile them on crunchy lime slaw with a chipotle crema drizzled over the top. This is the meatless taco night that never reads as the meatless option. It just reads as tacos. Twenty five minutes, no skillet, no drama.

Why this one is so easy

The air fryer chars cauliflower edges the way a screaming hot oven does, in half the time and without heating up the kitchen.

Slaw first, then cauliflower is the build order that keeps the tortilla from going soggy. The cabbage is the moisture barrier.

Everything happens in parallel: florets in the basket, slaw and crema on the counter, tortillas warmed at the end. Twenty five minutes, no pans.

Della's tips

Cut the florets bite-size and roughly even, about an inch and a half. Big ones stay hard in the middle while the small ones scorch.

Do not skip the halfway shake, the edges facing the fan are the ones getting crispy.

Two tortillas doubled up per taco is the classic corn-tortilla insurance move if yours tend to split.

Chipotle heat builds. Start with one minced pepper, taste, then decide if your crowd is a two-pepper crowd.

Make it your own

+ Charred corn: throw a cup of frozen corn into the basket for the last 5 minutes and tuck it in with the cauliflower. Sweet against the smoky spice, very good.

+ Crunchy topper: a spoonful of toasted pepitas on each taco earns its spot.

+ Beans in: warm a can of drained black beans with a pinch of cumin and tuck a spoonful under the cauliflower for a heartier taco.

If you are out of something

No chipotles? Half a teaspoon of chili powder plus a tiny pinch of smoked paprika in the crema gets you close.

Unsweetened dairy-free yogurt works instead of vegan mayo for a lighter, tangier crema.

Flour tortillas are fine if that is what is in the drawer, warm them the same way.

Make ahead

The spiced florets can be cut and tossed with the oil and spices up to a day ahead, covered in the fridge, so taco night starts at the basket. The crema keeps 4 days in a jar and honestly gets better as the chipotle settles in. Dress the slaw within an hour or two of dinner so it stays crunchy. Leftover cauliflower keeps 3 days and re-crisps in the air fryer at 375F for 3 to 4 minutes, and the microwave will make it soft, so do not.

Toss the cauliflower florets with the olive oil, chili powder, cumin, smoked paprika, garlic powder, and salt until every floret looks rusty red.

Air fry at 400F for 15 minutes, shaking the basket halfway, until the florets are tender inside with browned, crispy edges. Keep them in a rough single layer, a medium head just about fills one basket, so run two batches if yours is on the small side.

While the cauliflower cooks, toss the cabbage with the juice of one lime, a big pinch of salt, and most of the cilantro. Squeeze it with your hands for a minute so it softens slightly.

Stir the vegan mayo with the minced chipotle, the juice of the second lime, and a pinch of salt. Add a splash of water until it drizzles off a spoon.

Warm the tortillas in a dry skillet or in the air fryer for 30 seconds. Stack them slaw first, then cauliflower, then crema, avocado if you have it, and the last of the cilantro.
