This one started as a fridge raid. Half a block of halloumi that needed using, some chicken, a jar of honey, and no plan. Now it is the wrap I make when I want dinner to feel like a treat without earning a sink full of pans. The chicken goes sticky and hot and sweet, the halloumi goes golden and squeaks when you bite it, and then the whole rolled up thing goes back in the basket for five minutes so the tortilla blisters. That last round is not optional. It is the entire point.

Why this one is so easy

The hot honey and the halloumi do all the heavy lifting, so the chicken itself needs nothing more than cornstarch and a shake of paprika.

Everything happens in one basket, in three quick rounds, with no pan of oil to deal with afterward.

The last five minutes turn a floppy wrap into something that actually crunches, which is the difference between dinner and a sad desk lunch.

Halloumi does not melt and run out the end. It just goes golden and squeaky and stays put.

Della's tips

Dry the halloumi like you mean it. Straight from the brine it steams instead of browning, so blot it well before it goes anywhere near the basket.

Cornstarch, not flour. It is what gives the chicken those craggy edges the honey clings to.

Toss the chicken in the honey while both are hot, and do it right before you roll. Sauced chicken that sits goes soft.

Seam side down, always. A seam facing up peels itself open in the fan and you lose the filling to the basket.

Do not overfill. A fat wrap will not roll tight, and a loose roll unravels in the heat. Keep the filling to the lower third.

Make it your own

+ Buffalo instead of hot honey: toss the chicken in buffalo sauce and swap the yogurt for ranch.

+ Add crunch: a spoon of quick pickled red onion or a few jalapeno slices cuts the sweetness.

+ Bowl version: skip the tortilla and pile everything over rice with the yogurt spooned over.

+ Extra heat: a shake of cayenne in the cornstarch, and a hotter hot sauce in the honey.

If you are out of something

Chicken breast instead of thighs. Same cut size, check it a minute or two earlier.

Feta or a firm paneer instead of halloumi. Paneer behaves almost the same in the basket.

Sour cream or a plain mayo and lemon mix instead of the Greek yogurt.

Maple syrup with hot sauce if you are out of honey. Slightly thinner, still sticky.

Big low-carb tortillas work, they just crisp faster, so start checking at 4 minutes.

Make ahead

The chicken can be seasoned and sitting in the fridge for up to a day, and the garlic yogurt keeps three days. I would cook the halloumi fresh, it is only 8 minutes and it goes rubbery once it has been chilled and reheated. Rolled wraps hold in the fridge overnight if you keep the honey on the side and sauce them at the last minute. Leftover cooked wraps re-crisp at 350F for 3 to 4 minutes, much better than the microwave, which turns the tortilla to cloth.

Pat the halloumi very dry, cut it into half-inch sticks, and toss with a little oil. Air fry at 400F for 8 minutes, turning once halfway, until the outsides are deep golden. Set them aside. They stay squeaky, and they go back in the heat later anyway.

While that runs, toss the chicken with the cornstarch, smoked paprika, garlic powder, salt, pepper, and the tablespoon of oil until every piece looks dusty rather than wet.

Air fry the chicken at 400F for 10 to 12 minutes, shaking the basket at the halfway mark, until the edges are craggy and the thickest piece reads 165F.

Warm the honey with the pepper flakes for 20 seconds in the microwave. Stir the yogurt with the grated garlic, lemon, and a pinch of salt.

Tip the hot chicken straight into the hot honey and toss. Hot chicken plus warm honey is the whole trick, it slides into every crack instead of sitting on top.

Build each wrap on the lower third of a tortilla: a swipe of garlic yogurt, a handful of greens, the halloumi, then the sticky chicken. Fold the sides in, roll it up tight, and finish seam side down.

Air fry two wraps at a time, seam side down, at 380F for 5 minutes, until the tortilla is blistered and crackly. Repeat with the other two. Cut on the diagonal and dunk in whatever hot honey is left in the bowl.
