Half an hour buys you the coated ones, and they want one thing the fast band does not: a real three minute preheat. Breading has to hit hot metal or it turns pale and greasy. That is what makes the chicken parmesan keep its crunch under the cheese and the buffalo tenders shatter properly. Sticky glazes work the other way round: brush the honey garlic chicken and the bang bang chicken in the last few minutes, because sugar in the basket for twenty minutes turns black long before the chicken is done.

Drumsticks are the one cut people give up on, usually because they check the middle of the meat. Take the temperature right next to the bone. It reads lower there, and that is the number that decides whether dinner is done. See the drumsticks
Air fryer chicken worth a little more time
Bone-in and stacked things need the extra quarter hour, and they pay it back. Lemon pepper drumsticks crisp the whole way around instead of going soft underneath, garlic parmesan wings land on a weeknight, which I did not think was allowed, and the crispy chicken sandwiches hold up better than the drive-thru version. With bone-in pieces, take the temperature next to the bone and not in the middle of the meat, or you will pull them early every time.

The questions I get every week
For anything breaded and for skin-on pieces, yes. About three minutes at cooking temperature. Chicken that lands in a hot basket starts crisping straight away instead of drying out while the machine catches up. For nuggets and quesadillas I skip it and add a minute at the end.
400F for almost everything here. It is hot enough to render skin and set a coating before the inside overcooks. Drop to 375F only for very thick breasts. Then cook to temperature rather than to the clock: 165F in the thickest part, and next to the bone on drumsticks and wings, where it always reads lower.
Breaded frozen things like tenders and nuggets are the easiest win of the lot, straight from the bag. Frozen raw breasts and thighs cook through but they will not crisp the way thawed ones do, and they need roughly half again as long, so check the middle hits 165F before you call it.
Dry the skin properly before it goes in, leave the pieces skin side up the whole time, and give them space. A crowded basket steams. A standard 5 to 6 quart basket does about four portions, so cook in two rounds rather than piling it in.
The bowls and the sliced breast are built for it, and they keep four days in a sealed container. Breaded and coated recipes are best fresh, because that crunch does not love the fridge. Reheat those in the air fryer rather than the microwave, about four minutes at 375F, and the crust comes back.
Start with the crispy chicken thighs, the chicken tenders or the BBQ chicken breast. They are forgiving, they use pantry seasoning, and the timing is hard to mess up.
Anything you can halve without wrecking the layout of the basket. The chicken quesadillas, the BBQ chicken breast and the chicken parmesan all work at two portions, and they run faster in a half-full basket, so start checking a couple of minutes early.
Breaded and handheld wins nearly every time. The chicken nuggets, the tenders, the quesadillas and the taquitos get eaten without negotiation. Keep the sauce on the side and let people dip.
